This warm, classic soup is updated for the bone broth lifestyle!
Classic Creamy Tomato Soup
Yield: 2 servings
Portions: 1 fat
Ingredients:
- 1 28-ounce can of organic crushed, diced or pureed tomatoes (NOTE: pureed tomatoes will make a slightly richer soup)
- 2 cups chicken or beef bone broth (or 2 packets of SLIM Collagen Broth and 16 ounces of water)
- 1 teaspoon dried thyme
- 1 teaspoon dried basil or oregano or 10-12 fresh basil leaves
- 2 Tbsp ghee
- Salt and pepper to taste
Directions:
If using crushed or diced tomatoes blend in blender for 30 seconds on high until smooth.
Add blended tomatoes or tomato puree, bone broth, and seasonings to a pot or saucepan and bring to a simmer. Simmer soup for about 2 minutes and add the ghee then simmer for an additional 2 minutes.
Serve hot, with freshly-ground black pepper, if desired.
